Cake

  1. Mix Dry Ingredients: Preheat the oven to 350ºF. Grease a loaf pan and set aside. In a medium bowl, add all-purpose flour, baking powder, and salt. Whisk to combine.
  2. Stir Wet Ingredients: In a large bowl, add sugar, oil, eggs, crushed pineapple, sour cream, reserved pineapple juice, and vanilla extract. Whisk to combine.
  3. Combine: Add the dry ingredients to the wet ingredients. Mix until just combined.
  4. Bake: Pour the batter into the pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Once baked, let the bread cool in the pan for 15 minutes, then transfer to a wire rack to finish cooling.

Glaze

  1. Make the Glaze: Whisk powdered sugar, pineapple juice, and vanilla extract together until smooth.
